BBQ Pulled Pork Biscuit Casserole (Print)

Tender pulled pork and beans in BBQ sauce, crowned with golden Cheddar Bay biscuits for a hearty one-dish family meal.

# Ingredients:

→ Meat

01 - 450g pulled pork

→ Sauce Base

02 - 375ml BBQ sauce
03 - 425g can Ranch Style beans
04 - 15g chili powder
05 - 2.5g garlic powder
06 - Salt and freshly ground black pepper

→ Cheese

07 - 200g shredded cheddar cheese, divided

→ Biscuit Topping

08 - 320g Red Lobster Cheddar Bay Biscuit mix
09 - 180ml water
10 - 60ml melted butter

# Directions:

01 - Preheat oven to 220°C. Coat a 23×33 cm baking dish with nonstick cooking spray.
02 - In a large bowl, thoroughly combine pulled pork, barbecue sauce, chili powder, garlic powder, and Ranch beans. Season with salt and pepper to taste.
03 - Transfer the pulled pork mixture to the prepared baking dish, spreading it evenly. Sprinkle 150g of shredded cheddar cheese over the top.
04 - In a medium bowl, combine biscuit mix, water, and remaining 50g cheddar cheese according to package directions. Reserve the seasoning packet for later use.
05 - Using a small cookie scoop, distribute the biscuit batter over the cheese layer. With an offset spatula, gently spread the biscuit dough to cover the pulled pork mixture completely.
06 - Bake for 15 minutes or until the casserole is bubbling and the biscuits have turned golden brown.
07 - Mix melted butter with the reserved seasoning packet. Brush the baked biscuit topping with this garlic butter mixture and garnish with fresh parsley if desired.

# Notes:

01 - For best results, use freshly pulled pork that's not too saucy on its own.
02 - The casserole can be assembled up to 24 hours in advance and refrigerated until ready to bake.
