Pumpkin Shortbread Bars (Print Version)

# Ingredients:

01 - 1 1/4 cups all purpose flour.
02 - 3 tablespoons granulated sugar.
03 - 1/2 cup butter softened.
04 - Dash salt.
05 - 1/2 teaspoon vanilla extract.
06 - 1 1/2 cups pure pumpkin.
07 - 1/2 cup brown sugar packed.
08 - 1 teaspoon cinnamon.
09 - 1/2 teaspoon ground nutmeg.
10 - 1/4 cup all purpose flour.
11 - 1/3 cup semi-sweet chocolate chips.
12 - 1/3 cup walnuts toasted & chopped.
13 - 1/4 cup caramel sauce.

# Instructions:

01 - Preheat oven to 325° F. Line an 8x8 square dish with parchment paper or foil and spray lightly with cooking spray. Set aside.
02 - In a large bowl, combine all ingredients for shortbread until moist. Press evenly into bottom of prepared pan. Set aside.
03 - In a different large bowl, whisk together ingredients for pumpkin filling. Stir until smooth.
04 - Pour over shortbread and smooth the top.
05 - Sprinkle nuts and chocolate chips over top and press lightly into filling.
06 - Drizzle caramel sauce over top of entire dessert.
07 - Bake 45 minutes to an hour or until pumpkin filling has set.
08 - Cool completely before removing. Cut into 16 equal squares and serve.

# Notes:

01 - Can be served chilled for an amazing taste variation.
