Quick Easy Fish Stew (Print Version)

# Ingredients:

01 - 6 tablespoons extra virgin olive oil.
02 - 1 medium onion, chopped.
03 - 3 large garlic cloves, minced.
04 - 2/3 cup fresh parsley leaves, chopped.
05 - 1 1/2 cups chopped fresh tomatoes or 14 oz canned.
06 - 2 teaspoons tomato paste (optional).
07 - 8 ounces clam juice.
08 - 1/2 cup dry white wine.
09 - 1 1/2 pounds firm white fish fillets, cut in 2-inch pieces.
10 - Pinch dried oregano.
11 - Pinch dried thyme.
12 - 1/8 teaspoon Tabasco sauce.
13 - 1/8 teaspoon black pepper.
14 - 1 teaspoon salt.

# Instructions:

01 - Sauté onion in oil 4 minutes, add garlic 1 minute, then parsley 2 minutes.
02 - Stir in tomatoes and paste, cook 10 minutes.
03 - Pour in clam juice and wine, bring to simmer.
04 - Add fish and simmer 3-5 minutes until it flakes easily.
05 - Add herbs, Tabasco, salt and pepper to taste.

# Notes:

01 - Can add shellfish if desired.
02 - Shellfish stock can replace clam juice.
03 - Serve with crusty bread.
