Quick and Easy Pho (Print Version)

# Ingredients:

01 - 8 ounces dried rice vermicelli noodles.
02 - Choice of protein (chicken, pork, steak or shrimp).
03 - 1 large yellow onion, quartered.
04 - 2 (2-inch) pieces fresh ginger, halved lengthwise.
05 - 6 cups broth (chicken, beef or vegetable).
06 - 2 cups water.
07 - 1/4 teaspoon ground coriander.
08 - 1 whole clove (optional).
09 - 1 1/2 tablespoons fish sauce.
10 - 1/4 teaspoon hoisin sauce.
11 - 1/4 teaspoon soy sauce.
12 - 1/4 teaspoon red chili paste.
13 - 1 cinnamon stick.
14 - Salt and pepper to taste.
15 - Garnishes: green onions, jalapeƱos, cilantro, Thai basil, bean sprouts, lime wedges.

# Instructions:

01 - Cook quartered onion and ginger in dry pot for 4 minutes, stirring occasionally.
02 - Add broth, water, spices and sauces. Simmer 30 minutes.
03 - Cook noodles according to package. Prepare garnishes in small bowls.
04 - Add chosen protein to broth 1-5 minutes before serving, cooking just until done.
05 - Remove aromatics. Divide noodles into bowls, add broth and meat. Serve with garnishes.

# Notes:

01 - Can make broth ahead and refrigerate.
02 - Works well with leftover cooked meats.
03 - Can be made in Instant Pot or slow cooker.
