Italian Pastina Soup (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 tbsp butter, divided
02 - ½ cup celery, diced
03 - ½ cup carrot, diced
04 - ½ cup onion, diced
05 - 1 clove garlic, minced
06 - 1 cup pastina or orzo
07 - 4 cups chicken bone broth

→ Seasonings & Finishing

08 - ¼ tsp turmeric
09 - ¼ tsp kosher salt
10 - ¼ tsp fresh ground pepper
11 - ½ cup parmesan cheese, grated
12 - 1 egg, thoroughly whisked (optional)

# Instructions:

01 - Cook onion, carrot, and celery in 2 tbsp butter until soft. Add garlic and cook 2-3 minutes until fragrant.
02 - Add broth, turmeric, salt, and pepper. Bring to simmer, add pastina, and cook until al dente.
03 - Remove from heat, stir in parmesan and remaining butter.
04 - Cool for 4-5 minutes, then slowly stir in whisked egg while stirring continuously.
