Cook onion, carrot, and celery in 2 tbsp butter until soft. Add garlic and cook 2-3 minutes until fragrant.

Add broth, turmeric, salt, and pepper. Bring to simmer, add pastina, and cook until al dente.

Remove from heat, stir in parmesan and remaining butter.

Cool for 4-5 minutes, then slowly stir in whisked egg while stirring continuously.
