Raspberry Almond Sprinkle Cupcakes (Print Version)

# Ingredients:

→ For the Frosting

01 - 2 sticks of butter
02 - 4 cups powdered sugar
03 - 1 tsp vanilla extract
04 - 1/2 cup unsweetened cocoa powder
05 - 5-7 tbsp heavy cream
06 - Rainbow sprinkles

→ For the Cupcakes

07 - One box of almond cake mix
08 - 1 cup buttermilk
09 - 1/2 cup vegetable oil
10 - 3 eggs

→ For the Filling

11 - Seedless raspberry preserves
12 - Rainbow sprinkles (for topping)

# Instructions:

01 - In a mixing bowl, beat the butter until smooth. Add in half of the powdered sugar and mix. Add in the rest of the sugar, vanilla, cocoa powder, and heavy cream. Mix until fully combined. Let it sit overnight so it's super chocolatey in color! If you prefer, you can stick it in the fridge and pull it out an hour or so before using.
02 - Preheat the oven to 350°F and line a cupcake pan with cupcake liners. This recipe should make around 22 cupcakes.
03 - In a medium bowl, combine the cake mix, buttermilk, oil, and eggs. Using a cookie scoop, put equal amounts of cake batter in each liner.
04 - Bake according to the package directions and let them cool completely.
05 - Once cool, move the cupcakes to the fridge for about 30 minutes. This will make it easier to remove the inside for filling.
06 - Use a cupcake corer or apple corer to remove the inside of each cupcake. Be sure not to go all the way to the bottom so that the filling doesn't seep out. Set aside the removed cake pieces but don't discard them.
07 - Fill each cupcake with raspberry preserves using a spoon or piping bag. Add the filling until it reaches the top of the cupcake, then press the removed cake piece back in. Repeat with all cupcakes.
08 - Add the chocolate frosting to a piping bag with a 1M tip. Pipe a swirl of frosting on each cupcake and top generously with rainbow sprinkles. If you don't want to use a piping bag, just spread the frosting with a knife.

# Notes:

01 - For a darker chocolate frosting, make it the night before to allow the cocoa to settle in.
02 - Chilling the cupcakes makes them easier to core and fill without crumbling.
03 - You can use any flavor of preserves to customize these cupcakes to your preference.
