Red Velvet Lava Cupcakes (Print Version)

# Ingredients:

→ Cupcakes

01 - 1 box (15 oz) red velvet cake mix
02 - Ingredients called for on cake mix box (eggs, water, oil)

→ Ganache Filling

03 - 8 ounces semi-sweet baking chocolate
04 - ½ cup heavy cream

→ Topping

05 - Powdered sugar for garnish

# Instructions:

01 - Combine chopped chocolate and heated heavy cream. Stir until smooth. Chill until firm, at least 2 hours.
02 - Preheat oven to 350°F. Line muffin tins with cupcake liners.
03 - Mix cake batter according to box directions. Fill liners 1/2 full.
04 - Scoop 1 tablespoon balls of chilled ganache and place in center of each cupcake.
05 - Bake 20-23 minutes until toothpick in side comes out clean. Cool briefly in pans.
06 - Remove liners, turn upside down, dust with powdered sugar. Best served warm.

01 - Can be reheated briefly in microwave
02 - Don't overfill cupcake liners
