Ritz Cracker Chicken (Print Version)

# Ingredients:

01 - 1-1/4 pounds thin-sliced boneless chicken breasts.
02 - 2 large eggs, beaten.
03 - 1 sleeve Ritz crackers (about 30), crushed.
04 - 1 teaspoon salt.
05 - 1 teaspoon black pepper.
06 - 1/2 teaspoon garlic powder.
07 - 1/2 cup butter, cubed.

# Instructions:

01 - Heat oven to 375°F.
02 - Mix crushed crackers with salt, pepper and garlic powder in a medium bowl.
03 - Pat chicken dry, dip in beaten eggs, then coat evenly with cracker mixture.
04 - Place coated chicken in 9x13 baking dish, scatter butter cubes around chicken.
05 - Cook 25-30 minutes until chicken is done and juices run clear.
06 - Serve hot, spooning melted butter over chicken if desired.

01 - Keeps in fridge up to 3 days.
02 - Can be frozen up to 3 months.
03 - Reheat in oven at 350°F until warm.
