Roasted Sweet Potato Boats (Print)

Soft sweet potatoes with spiced chickpeas and zesty lime honey drizzle.

# Ingredients:

01 - 4 small sweet potatoes
02 - 1 can chickpeas (15 oz), drained and rinsed
03 - 1 tbsp olive oil
04 - 1 tsp smoked paprika
05 - 1/2 tsp garlic powder
06 - 1/2 tsp salt
07 - Black pepper
08 - 1 cup cottage cheese
09 - 1/2 avocado, sliced
10 - 2 tbsp honey
11 - 1 tsp lime juice
12 - Pinch red pepper flakes
13 - 2 tbsp pepitas (optional)
14 - Pinch chili-lime seasoning (optional)
15 - Quick cucumber slices with a pinch of salt (optional)

# Directions:

01 - Preheat the oven to 400°F (200°C).
02 - Place the sweet potatoes on a baking sheet and roast for 40 to 50 minutes until very soft.
03 - Drain, rinse, and pat the chickpeas dry. Toss with olive oil, smoked paprika, garlic powder, salt, and black pepper.
04 - Spread the chickpeas on a baking sheet and roast for 15 to 18 minutes, shaking the pan once, until crisp.
05 - In a small bowl, mix honey, lime juice, and a pinch of red pepper flakes.
06 - Split each roasted sweet potato and fluff the inside with a fork.
07 - Spoon cottage cheese onto each sweet potato, then top with warm crispy chickpeas and avocado slices.
08 - Drizzle with the spicy lime honey and add pepitas or cucumber slices if using.
09 - Serve warm.
