Roasted Sweet Potato with Honey (Print)

Golden sweet potato rounds with honey, feta, and herbs.

# Ingredients:

01 - 3 large sweet potatoes
02 - 3 tablespoons olive oil
03 - 1/2 teaspoon cinnamon
04 - 1/2 teaspoon smoked paprika
05 - 1/2 teaspoon ground cumin
06 - 1/2 teaspoon ground coriander
07 - 1/2 teaspoon red pepper flakes
08 - 1 teaspoon kosher salt
09 - 1/2 teaspoon black pepper
10 - 1 tablespoon hot or regular honey (plus more for drizzling)
11 - 1/3 cup crumbled feta cheese
12 - Fresh chives or parsley, chopped

# Directions:

01 - Preheat oven to 425°F.
02 - Wash and dry sweet potatoes, then slice into ⅓-inch thick rounds.
03 - Drizzle olive oil onto a large rimmed baking sheet. Add sweet potatoes and toss to coat. Sprinkle with spices and salt, then drizzle with honey. Flip slices to coat evenly.
04 - Spread slices in a single layer without touching. Use two trays if needed.
05 - Roast for 20 minutes, flip, then roast an additional 20–25 minutes until golden and crispy at edges.
06 - Transfer to serving platter, drizzle with more honey, sprinkle feta on top, and garnish with fresh herbs.
07 - Serve warm.
