Preheat the oven to 175°C (350°F). Grease a 12-cup muffin pan with non-stick cooking spray and set aside.

Crumble the sausage into a skillet over medium-high heat and cook until no longer pink. Drain off the fat and allow the sausage to cool slightly.

In a large mixing bowl, lightly beat the eggs. Add the shredded cheese, Bisquick, and the cooked sausage; mix well to combine.

Fill each prepared muffin cup about ¾ full with the mixture.
