Sausage Rolls with Hot Honey and Thyme (Print Version)

# Ingredients:

01 - 1 pound breakfast pork and sage sausage.
02 - ½ cup sharp cheddar cheese, freshly grated.
03 - ½ cup panko breadcrumbs.
04 - 2 eggs, divided.
05 - 2 tablespoons Dijon mustard.
06 - 1 tablespoon fresh thyme leaves, plus extra for garnish.
07 - 17.3 oz puff pastry (2 sheets).
08 - 2 tablespoons Everything but the Bagel seasoning.
09 - Hot honey for drizzling.

# Instructions:

01 - Heat oven to 400°F. Line baking sheet with parchment paper.
02 - Combine sausage, cheese, breadcrumbs, 1 egg, and thyme in a bowl until well mixed.
03 - Whisk remaining egg with 1 tablespoon water for egg wash.
04 - Roll out puff pastry sheets and cut each into two long strips for total of four strips.
05 - Shape sausage into four logs, place on pastry strips. Brush one side with mustard, other with egg wash. Roll and seal.
06 - Score tops, cut into 1½-inch rolls. Brush with egg wash, add seasoning. Bake 18-20 minutes until golden.
