Heat oven to 400°F. Line baking sheet with parchment paper.

Combine sausage, cheese, breadcrumbs, 1 egg, and thyme in a bowl until well mixed.

Whisk remaining egg with 1 tablespoon water for egg wash.

Roll out puff pastry sheets and cut each into two long strips for total of four strips.

Shape sausage into four logs, place on pastry strips. Brush one side with mustard, other with egg wash. Roll and seal.

Score tops, cut into 1½-inch rolls. Brush with egg wash, add seasoning. Bake 18-20 minutes until golden.
