Shrimp Quesadilla Melty Cheese (Print)

# Ingredients:

01 - 2 tablespoons neutral-flavored oil (e.g., avocado oil, refined coconut oil, canola oil)
02 - 1 small onion, diced (approximately 1 cup)
03 - 1 medium bell pepper, chopped (approximately 1 cup)
04 - 1 tablespoon taco seasoning (store-bought or homemade)
05 - Salt to taste
06 - 1 pound raw medium shrimp, peeled and deveined
07 - 1-2 tablespoons fresh lime juice (juice from approximately 1 medium lime)
08 - 4 tablespoons butter, plus more as needed
09 - 6 10-inch flour tortillas
10 - 3 cups shredded cheese (quesadilla cheese, Monterey cheese, or Mexican-style cheese blend, divided)

# Directions:

01 - Heat a large skillet over medium-high heat. Add 2 tablespoons neutral oil and swirl to coat the surface. When hot, add diced onion and chopped bell pepper. Stir occasionally and cook for 5 to 6 minutes until onions are translucent and peppers softened. Avoid over-stirring to allow browning.
02 - Reduce heat to medium, and stir in taco seasoning to coat the vegetables. Add the shrimp and cook for 3 to 5 minutes, stirring occasionally, until shrimp are opaque and slightly curled.
03 - Remove skillet from heat. Sprinkle lime juice over the shrimp and vegetable mixture, stir, and set aside.
04 - Heat another skillet over medium heat. Add ½ tablespoon butter and swirl to coat. Place one flour tortilla flat in the skillet. Spoon approximately ⅓ cup shrimp mixture onto one half of the tortilla, then top with ½ cup shredded cheese. Cook for about 90 seconds or until the bottom is lightly browned.
05 - Carefully lift the opposite half of the tortilla and fold it over the filling. Press gently with a spatula. Flip the quesadilla and cook for 1 to 2 minutes until the second side is lightly browned. Sprinkle with salt to taste, and transfer to a large plate.
06 - Repeat the process with the remaining tortillas, shrimp, and cheese until all quesadillas are cooked. Serve warm with desired toppings and sides.
