Shrimp Scampi Orzo (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 lb large shrimp, peeled and deveined
02 - 2 tablespoons extra-virgin olive oil, divided
03 - 1 lemon
04 - 5 garlic cloves, thinly sliced
05 - 4 tablespoons butter, divided
06 - 1/3 cup minced shallots
07 - Pinch crushed red pepper flakes
08 - 1/3 cup dry white wine (or broth with splash of white wine vinegar)
09 - 1 cup dry orzo pasta

→ Herbs & Seasonings

10 - 1/4 cup chopped fresh parsley
11 - 2 tablespoons chopped fresh chives
12 - Kosher salt
13 - Freshly ground black pepper

# Instructions:

01 - Toss shrimp with olive oil, lemon zest, garlic, salt, and pepper.
02 - Cook shrimp in butter until opaque, about 3 minutes. Remove to bowl.
03 - Sauté shallots, garlic, and chili flakes in butter and oil. Add orzo and toast 1-2 minutes. Add wine and reduce.
04 - Add water and simmer uncovered until orzo is al dente and liquid absorbs, about 12 minutes.
05 - Return shrimp to pan with half the herbs. Garnish with lemon juice, olive oil, remaining herbs, and pepper.

# Notes:

01 - Keeps in refrigerator up to 3 days
02 - Add liquid when reheating to rehydrate orzo
03 - Add fresh lemon juice after reheating
