# Ingredients:

01 - 1 lb lean ground beef.
02 - 1 red bell pepper, diced.
03 - 1 medium zucchini, diced.
04 - 6 green onions, divided.
05 - 1 teaspoon chili powder.
06 - 1 teaspoon cumin.
07 - 1/2 teaspoon garlic powder.
08 - 1/2 teaspoon oregano.
09 - 2 cups red enchilada sauce.
10 - 15 oz black beans, drained.
11 - 1 cup frozen corn.
12 - 8 corn tortillas, cut in wedges.
13 - 1 1/2 cups Mexican cheese.
14 - Cooking spray.
15 - 1/2 teaspoon olive oil.
16 - Optional garnishes.

# Instructions:

01 - Preheat oven to 425°F.
02 - Brown beef with vegetables in oiled skillet until cooked.
03 - Add seasonings, sauce, beans, corn, and 1/2 cup cheese.
04 - Fold in tortilla wedges to coat with sauce.
05 - Top with remaining cheese.
