Slow Cooker Potato Onion Dish (Print)

Tender potato and onion layers slow cooked to perfection.

01 - 3 tablespoons salted butter, melted
02 - 2 pounds russet or Yukon Gold potatoes, thinly sliced (about 1/8-inch thick)
03 - 2 large yellow onions, thinly sliced (about 1/8–1/4-inch thick)
04 - Extra butter for greasing the slow cooker

# Directions:

01 - Lightly grease the inside of a 4- to 6-quart slow cooker with extra melted butter to prevent sticking and enhance flavor.
02 - Peel or scrub the potatoes as desired, then cut into thin rounds about 1/8-inch thick. Peel the onions, slice in half from root to tip, then cut each half into thin slices about 1/8–1/4-inch thick.
03 - Drizzle 1 to 2 teaspoons of melted butter into the bottom of the slow cooker and tilt to coat the surface. Add a single layer of potatoes, slightly overlapping. Sprinkle a handful of onions over the potatoes and drizzle a teaspoon of melted butter. Repeat this layering process until all potatoes and onions are used. Finish with any remaining melted butter drizzled on top.
04 - Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the potatoes are tender and the onions are caramelized.
05 - Once cooked, remove the lid and let the dish rest for 10 minutes to allow steam to settle. Serve by scooping through all layers to ensure each portion contains both potatoes and onions. Drizzle buttery juices from the bottom over each serving for added flavor.

01 - Use Yukon Gold potatoes for a buttery texture, or leave the skins on for a rustic appearance.
02 - Peel potatoes for a smoother texture, or leave unpeeled for added fiber.
