Taco Chicken and Rice (Print)

A simple slow-cooker dish with taco-spiced chicken and cheesy rice for busy evenings.

01 - 3–4 boneless, skinless chicken breasts (approximately 2 pounds)
02 - 1 (1-oz) packet taco seasoning
03 - 1 (10.5-oz) can unsalted cream of chicken soup
04 - 1 (10-oz) can diced tomatoes & green chiles (undrained)
05 - 1 (7.6-oz) box cheesy Mexican rice

# Directions:

01 - Add the chicken breasts to the bottom of a 6-quart slow cooker.
02 - In a bowl, combine taco seasoning, cream of chicken soup, and undrained diced tomatoes with green chiles.
03 - Spread the mixture evenly over the chicken.
04 - Set the slow cooker to LOW for 6–8 hours or HIGH for 3–4 hours.
05 - Use two forks to shred the chicken directly in the slow cooker. Stir to coat in sauce.
06 - Cook the rice according to the package directions.
07 - Stir the cooked rice into the shredded chicken mixture. Serve warm with your favorite taco toppings.
