01 - 150 grams all-purpose flour, plus extra for dusting
02 - 7 grams aluminum-free baking powder
03 - 2 grams baking soda
04 - 2 grams kosher salt

05 - 57 grams unsalted butter, cut into small cubes
06 - 115 grams milk

# Directions:

01 - Heat oven to 425° Fahrenheit.
02 - Line a small baking sheet with parchment paper or a nonstick baking mat.
03 - In a large mixing bowl, stir together the flour, baking powder, baking soda, and kosher salt.
04 - Use a pastry cutter to cut the cold butter pieces into the dry ingredients until the mixture is coarse and sandy.
05 - Add cold milk to the flour mixture and stir until everything is just combined. The dough should be crumbly, shaggy, and loose.
06 - Lightly flour a cutting board and tip the dough onto the floured surface. Gently pat the dough together until it holds its shape. Fold it over itself several times and pat it into a 1-inch thick square.
07 - Cut the dough into quarters using a sharp knife.
08 - Place the biscuits on the prepared baking sheet, leaving 1–2 inches of space between each one. Bake at 425°F for 10–12 minutes or until golden brown.
