Chop onion and bell pepper, peel and cut potatoes into chunks, and season pork chops with garlic powder, onion powder, and paprika.

Heat olive oil or butter in a large skillet over medium heat. Sear pork chops on both sides until golden brown, about 4 minutes per side. Remove and set aside.

In the same skillet, sauté onion, bell pepper, and potatoes until slightly softened, about 5–7 minutes.

Return pork chops to the skillet, cover with a lid, and cook on low heat for 20–25 minutes, or until potatoes are tender and pork chops are cooked through.
