Sour Cream Cookie Bars (Print Version)

# Ingredients:

01 - 2 sticks (8 ounces) unsalted butter, room temperature
02 - ½ cup full-fat sour cream, room temperature
03 - 1 large egg, room temperature
04 - 1½ cups granulated sugar
05 - 1 tablespoon lemon juice
06 - 2 teaspoons vanilla extract
07 - ½ teaspoon kosher salt
08 - 2½ cups all-purpose flour

→ Frosting

09 - 1 stick (4 ounces) unsalted butter
10 - 1 pinch kosher salt
11 - 1 teaspoon vanilla extract
12 - 2 cups powdered sugar
13 - 1-2 drops food coloring gel or liquid (optional)
14 - ¼ cup rainbow sprinkles (optional)

# Instructions:

01 - Heat oven to 350°F. Line 9x9-inch pan with parchment paper sling. Bring butter, egg, and sour cream to room temperature.
02 - Beat butter and sugar until fluffy. Add sour cream, egg, lemon juice, vanilla, and salt. Mix in flour until just combined. Spread in pan.
03 - Bake 30-35 minutes until golden brown. Cool 10 minutes in pan, then remove to rack to cool completely.
04 - Beat butter and salt until creamy. Add vanilla. Gradually beat in powdered sugar. Add food coloring if desired.
05 - Spread frosting on cooled bars. Add sprinkles if desired. Let set 30 minutes or chill 20 minutes before cutting into 16 pieces.
