Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Grate the sharp cheddar cheese. Freshly grated cheese provides the best texture for the crackers.

In a medium bowl, mix the flour, cayenne pepper, paprika, salt, and baking powder until evenly combined.

Add the grated cheese and cubed butter to the dry ingredients. Use your hands or a pastry cutter to mix until crumbly.

Add water gradually, a tablespoon at a time, and mix until the dough comes together but is not sticky.

Roll the dough out on a lightly floured surface to about 6mm (¼ inch) thickness. For crispier crackers, roll thinner.

Cut the dough into small shapes using a knife or cookie cutter. Place on the baking sheet without overlapping.

Bake the crackers in the preheated oven for 20-25 minutes or until golden brown and crispy.
