Special Fried Rice (Print Version)

# Ingredients:

→ Main Ingredients

01 - 3 cups cooked long grain rice (about 200 grams, or 2 servings)
02 - 100 grams Char Siu (Chinese BBQ chicken, pork, or other cooked meat, cut in small pieces)
03 - 150 grams prawns (peeled and deveined)
04 - 2 eggs (whisked and seasoned with a pinch of salt)
05 - 50 grams green peas (about ½ cup)
06 - 1 carrot (cut into small dice)
07 - ½ onion (cut into small dice)
08 - 2 cloves garlic (finely chopped)
09 - 2-3 spring onions (cut into thin slices)
10 - 2-3 tbsp cooking oil (neutral flavor)

→ Prawn Marinade

11 - 1 tsp soy sauce (regular or light)
12 - 1 tsp Shao Xing wine (Chinese cooking rice wine)
13 - 1 tsp corn starch (or potato starch)
14 - ¼ tsp white pepper powder (or black pepper)

→ Seasoning

15 - 2 tbsp soy sauce (regular or light)
16 - 1 tsp chicken powder (or bouillon powder or MSG)
17 - 1 tsp sesame oil (toasted)
18 - ½ tsp white pepper powder (or black pepper)

# Instructions:

01 - Fluff the cooked rice gently by using your hand or spoon. Make sure to break up any clumps to separate the grains to prevent it from getting sticky.
02 - Cut char siu meat into small pieces. Dice the vegetables according to the recipe.
03 - Season the prawns with soy sauce, Shao Xing wine, white pepper, and corn starch. Mix well and set aside.
04 - Heat a large wok or pan over medium-high heat. Drizzle oil, add onions and follow with the chopped garlic. Next, add carrot and stir fry for a few seconds.
05 - Add the marinated prawns and cook for 1-2 minutes, then push the prawns to one side of the pan. Drizzle more oil in the pan and add the whisked egg. Let it set for a few seconds and break the egg into small pieces.
06 - Add char siu and green peas and continue stir frying for a few seconds.
07 - Now add the rice and all seasoning ingredients: soy sauce, white pepper, chicken powder, and sesame oil. Combine everything well and stir fry for 1-2 minutes.
08 - Add spring onions and make a final quick toss. Remove from heat and serve immediately.

# Notes:

01 - Day-old or leftover cold rice is ideal for fried rice as it has less moisture and won't turn mushy.
02 - Have all ingredients prepped and ready before you start cooking, as stir-frying moves quickly.
03 - You can substitute the char siu with any BBQ chicken, pork, lamb, or other cooked meat you have available.
04 - For a vegetarian version, replace the meat and prawns with tofu and more vegetables.
