Split Pea Soup (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1½ cups yellow onion, chopped.
03 - 1¼ cups celery, chopped.
04 - 1 teaspoon garlic, minced.
05 - 4 cups unsalted chicken broth.
06 - 4 cups water.
07 - 16 oz dried split peas, rinsed.
08 - 2 bay leaves.
09 - 1½ teaspoons fresh thyme (or ½ teaspoon dried).
10 - 1½ pounds meaty ham bone or shanks.
11 - 1 cup carrots, chopped.
12 - Fresh parsley for garnish.
13 - Salt and pepper to taste.

# Instructions:

01 - Heat oil and cook onion and celery for 3 minutes. Add garlic and cook 1 minute more.
02 - Pour in broth, water, peas, bay leaves, thyme, and ham. Season lightly with salt and pepper.
03 - Bring to boil, reduce heat and simmer covered 60-80 minutes until peas and ham are tender.
04 - Remove ham, let rest 10 minutes, then shred meat. Add carrots to soup.
05 - Simmer 30 minutes more until peas break down. Return ham to soup and season.

# Notes:

01 - Can be made in slow cooker or Instant Pot.
02 - Add potatoes with carrots if desired.
03 - Soup thickens as it cools.
