Starbucks Lime Coconut Bars (Print Version)

# Ingredients:

→ Coconut Bars

01 - ½ cup butter, softened (salted or unsalted)
02 - ⅔ cup brown sugar
03 - 1 egg, at room temperature
04 - 1 teaspoon vanilla extract
05 - ¼ teaspoon coconut extract
06 - 1 ¼ cups flour
07 - ½ teaspoon baking powder
08 - ¼ teaspoon salt
09 - ½ cup shredded coconut, plus extra for topping
10 - ⅓ cup white chocolate chips, ideally mini-sized

→ Lime Frosting

11 - ½ cup butter, at room temperature
12 - ½ teaspoon lime extract
13 - 1 ½ cups powdered sugar
14 - 1 tablespoon heavy cream or milk
15 - 2 tablespoons lime juice
16 - Food coloring (optional)
17 - 2 tablespoons melted white chocolate for drizzling

# Instructions:

01 - Preheat the oven to 350°F (175°C), line an 8x8 inch baking pan with parchment paper, and set aside.
02 - Cream the butter and brown sugar together until creamy. Add the egg, vanilla extract, and coconut extract, mixing until well combined.
03 - Fold in the flour, baking powder, salt, and shredded coconut until just combined and the flour mixture disappears. Fold in the white chocolate chips.
04 - Spread the batter evenly into the prepared pan. Bake in the preheated oven for 15-16 minutes. Remove and let cool completely.
05 - Whip the softened butter, powdered sugar, milk, lime juice, and lime extract together in a large bowl until light and fluffy.
06 - Mix in a little lime green food coloring or a combination of yellow and green food coloring to achieve the desired shade. Stir until smooth.
07 - Frost the cooled coconut bars with the prepared lime frosting. Drizzle the melted white chocolate on top using a piping bag, ziplock bag, or spoon.
08 - Sprinkle with extra shredded coconut if desired, slice into squares, and enjoy. If preferred chilled, refrigerate until set.
