01 -
Preheat the oven to 350°F (175°C), line an 8x8 inch baking pan with parchment paper, and set aside.
02 -
Cream the butter and brown sugar together until creamy. Add the egg, vanilla extract, and coconut extract, mixing until well combined.
03 -
Fold in the flour, baking powder, salt, and shredded coconut until just combined and the flour mixture disappears. Fold in the white chocolate chips.
04 -
Spread the batter evenly into the prepared pan. Bake in the preheated oven for 15-16 minutes. Remove and let cool completely.
05 -
Whip the softened butter, powdered sugar, milk, lime juice, and lime extract together in a large bowl until light and fluffy.
06 -
Mix in a little lime green food coloring or a combination of yellow and green food coloring to achieve the desired shade. Stir until smooth.
07 -
Frost the cooled coconut bars with the prepared lime frosting. Drizzle the melted white chocolate on top using a piping bag, ziplock bag, or spoon.
08 -
Sprinkle with extra shredded coconut if desired, slice into squares, and enjoy. If preferred chilled, refrigerate until set.
