Pour a little oil over your Blackstone, then heat to medium-high (approximately 200°C).

Add the steak pieces and onions to the hot griddle. Season with salt, pepper, and onion powder. Cook until the beef is browned and fully cooked, about 4-8 minutes, turning occasionally.

Push the cooked steak and onions to one side of the griddle to create space, then reduce heat to medium.

Place tortillas on the cleared area. Layer each with mozzarella and Monterey Jack cheese, spoon the steak-onion mixture on top, then add another layer of cheese.

Fold each tortilla in half to create semicircles. Cook until the bottom turns golden brown, approximately 2 minutes.

Carefully flip the quesadillas and cook for another 2 minutes until the other side is crisp and golden, watching closely to prevent burning.
