01 - 1 lb (450g) flank steak or sirloin, thinly sliced against the grain
02 - 1 tablespoon olive oil
03 - 1 onion, thinly sliced
04 - 1 bell pepper, thinly sliced (optional)
05 - 2 cloves garlic, minced
06 - 1 teaspoon smoked paprika
07 - 1 teaspoon ground cumin
08 - 1 teaspoon dried oregano
09 - Salt and pepper, to taste
10 - 1 cup shredded cheddar cheese (or mozzarella, provolone, or gouda)
11 - ½ cup beef broth or water
12 - Fresh parsley or cilantro for garnish (optional)

# Instructions:

01 - Slice the steak thinly against the grain for tenderness. Season the slices with salt, pepper, smoked paprika, cumin, and oregano. Toss to coat evenly. Slice the onion and bell pepper thinly. Mince the garlic and set aside.
02 - Heat a large skillet over medium-high heat with olive oil for 1-2 minutes. Add the steak slices in a single layer and sear for 2-3 minutes per side until browned. Cook in batches if necessary to avoid overcrowding. Remove the steak from the skillet and set aside, leaving juices in the pan.
03 - In the same skillet, sauté the onion and bell pepper for 4-5 minutes until softened and slightly caramelized. Add the minced garlic and cook for another 1-2 minutes until fragrant.
04 - Return the cooked steak to the skillet with the vegetables. Stir to combine. Pour in the beef broth or water to deglaze the pan and create a light sauce. Simmer for 2-3 minutes.
05 - Sprinkle shredded cheese evenly over the mixture. Cover the skillet with a lid and let the cheese melt for 2-3 minutes until fully gooey and bubbly.
06 - Remove the skillet from heat. Garnish with freshly chopped parsley or cilantro. Serve immediately with a side of rice, tortilla chips, or a fresh salad.
