Sticky Chicken Fried Rice Plate (Print)

01 - 2 pounds boneless, skinless chicken thighs
02 - 1 tablespoon soy sauce
03 - 1 tablespoon oyster sauce
04 - 1 tablespoon honey
05 - 1 tablespoon brown sugar
06 - 1 teaspoon garlic powder
07 - 1/2 teaspoon onion powder
08 - 1/2 teaspoon black pepper
09 - 1 tablespoon oil
10 - 2 cloves garlic, minced

→ Glaze

11 - 1/4 cup soy sauce
12 - 3 tablespoons honey
13 - 2 tablespoons brown sugar
14 - 1 tablespoon hoisin sauce
15 - 2 tablespoons water

→ Fried Rice

16 - 3 cups cooked day-old white rice
17 - 2 eggs, lightly beaten
18 - 1 cup frozen peas and carrots
19 - 2 green onions, sliced
20 - 2 tablespoons soy sauce
21 - 1 tablespoon butter
22 - 1 tablespoon oil

# Directions:

01 - Cut half the chicken into small bite-size pieces and leave the other half in larger pieces or strips. Toss with soy sauce, oyster sauce, honey, brown sugar, garlic powder, onion powder, black pepper, and minced garlic. Let it marinate for 15 minutes to absorb flavors.
02 - Heat oil in a large skillet over medium-high heat. Cook the larger chicken pieces first until browned and cooked through. Remove and set aside. Cook the smaller pieces longer until darker and caramelized.
03 - In the same skillet, combine soy sauce, honey, brown sugar, hoisin sauce, and water. Let it simmer for 2-3 minutes until thick and glossy. Add the chicken to the glaze and toss to coat evenly.
04 - Heat butter and oil in another skillet or a cleaned pan. Scramble the eggs, then mix in the rice, peas and carrots, green onions, and soy sauce. Stir-fry until hot, lightly browned, and well combined.
05 - Serve the fried rice alongside the glazed sliced chicken and caramelized chicken bites. Drizzle extra glaze over the chicken before serving.
