Strawberry Cheesecake in Jars (Print)

# Ingredients:

→ Cheesecake Filling

01 - 1 cup cream cheese, softened
02 - ½ cup powdered sugar
03 - 1 teaspoon vanilla extract
04 - 1 cup heavy whipping cream, cold

→ Crust Layer

05 - 1 cup graham cracker crumbs or crushed digestive biscuits
06 - 3 tablespoons melted butter
07 - 1 tablespoon granulated sugar

→ Strawberry Topping

08 - 2 cups fresh strawberries, chopped
09 - ¼ cup granulated sugar
10 - 1 tablespoon lemon juice

# Directions:

01 - Add strawberries, sugar, and lemon juice to a saucepan. Cook over medium heat until strawberries soften and release their juices. Simmer until thickened, then cool completely.
02 - Combine cookie crumbs, melted butter, and sugar. Mix until evenly coated. Set aside.
03 - Whip cold heavy cream until stiff peaks form. Set aside.
04 - Beat cream cheese until smooth. Add powdered sugar and vanilla extract. Fold in whipped cream gently.
05 - Spoon crust into the bottom of each jar. Add cheesecake filling. Top with strawberry sauce. Repeat layers if desired.
06 - Refrigerate jars for at least 2 hours before serving.
