In a mixing bowl, beat together softened cream cheese, sugar, and vanilla until smooth. Gently fold in the diced strawberries until well combined.

Spread half of the strawberry cream cheese mixture onto a tortilla. Melt 1 teaspoon of butter in a pan over medium-high heat. Place the tortilla in the pan, cream cheese side up.

Spread 1 teaspoon of butter on the second tortilla and lay it butter-side up over the cream cheese. Cook both sides of the quesadilla for 2-3 minutes each until crispy.

In a small bowl, mix sugar and cinnamon. Sprinkle this mixture on top of the cooked quesadilla.

Repeat the process for the second quesadilla or use a griddle to cook both at the same time. Let the quesadillas rest for 2 minutes before slicing. Serve with strawberry sauce if desired.
