Strawberry Cheesecake Quesadillas Delight (Print Version)

# Ingredients:

→ Filling

01 - ½ cup cream cheese, softened
02 - 2 tablespoons sugar
03 - ½ teaspoon vanilla extract
04 - ½ cup diced strawberries

→ Quesadillas

05 - 4 (6-inch) tortillas
06 - 2 tablespoons butter, softened
07 - 1 teaspoon sugar
08 - ½ teaspoon cinnamon

→ Optional

09 - Strawberry sauce for dipping

# Instructions:

01 - In a mixing bowl, beat together softened cream cheese, sugar, and vanilla until smooth. Gently fold in the diced strawberries until well combined.
02 - Spread half of the strawberry cream cheese mixture onto a tortilla. Melt 1 teaspoon of butter in a pan over medium-high heat. Place the tortilla in the pan, cream cheese side up.
03 - Spread 1 teaspoon of butter on the second tortilla and lay it butter-side up over the cream cheese. Cook both sides of the quesadilla for 2-3 minutes each until crispy.
04 - In a small bowl, mix sugar and cinnamon. Sprinkle this mixture on top of the cooked quesadilla.
05 - Repeat the process for the second quesadilla or use a griddle to cook both at the same time. Let the quesadillas rest for 2 minutes before slicing. Serve with strawberry sauce if desired.

# Notes:

01 - To store, wrap each quesadilla individually in plastic wrap or aluminum foil to prevent sticking. Refrigerate for up to 3-4 days or freeze for up to 2-3 months. Defrost in the refrigerator before serving chilled.
