Stuffed Chocolate Cookies (Print Version)

# Ingredients:

01 - Filling: 1 cup creamy peanut butter.
02 - 1 cup powdered sugar.
03 - Cookie Dough: 1/2 cup unsalted butter, room temp.
04 - 1 cup light brown sugar.
05 - 1/4 cup creamy peanut butter.
06 - 1 1/2 teaspoons vanilla extract.
07 - 1 egg.
08 - 1 egg yolk.
09 - 1 1/2 cups all-purpose flour.
10 - 1/2 cup cocoa powder.
11 - 1/2 teaspoon kosher salt.
12 - 1/2 teaspoon baking soda.
13 - Sugar for topping.

# Instructions:

01 - Mix peanut butter and powdered sugar until smooth for filling.
02 - Scoop 1-inch filling balls and freeze 30-60 minutes.
03 - Whisk together flour, cocoa, salt, and baking soda.
04 - Cream butter 2 minutes, add brown sugar and beat 2-3 minutes more.
05 - Mix in peanut butter until light and creamy.
06 - Add vanilla, egg, and yolk until combined.
07 - Gradually mix in dry ingredients on low speed.
08 - Flatten cookie dough portions and wrap around frozen PB balls.
09 - Place on lined baking sheets and slightly flatten.
10 - Bake at 350°F for 8-10 minutes.
11 - Sprinkle with sugar while hot.
