Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper. Lightly flour your work surface and roll the pizza dough into a rectangle about ¼-inch thick. Using a knife or pizza cutter, cut the dough into evenly sized squares roughly 6 to 8 cm each.

Place a small spoonful of pizza sauce in the center of each dough square. Add a cube of mozzarella cheese and 1–2 pepperoni slices on top of the sauce. Be careful not to overfill as too much filling can cause the bites to burst open during baking.

Gently pull the corners of each dough square up and over the filling, pinching tightly to seal. Roll each sealed piece between your palms to form a smooth ball, making sure the seam is well closed. Place seam-side down on the prepared baking sheet.

Brush the tops of the dough balls with olive oil or melted butter. Sprinkle evenly with garlic powder, Italian seasoning, crushed red pepper flakes (if using), and a light pinch of salt.

Bake for 15–20 minutes or until the pizza bites are puffed, golden brown, and fully cooked through. Remove from the oven and immediately sprinkle with grated Parmesan and fresh herbs, if desired.

Let the bites cool for a few minutes, then serve warm with extra pizza sauce, marinara, or ranch dressing for dipping.
