Mouthwatering Stuffed Potato Cakes (Print Version)

# Ingredients:

01 - 2 pounds potatoes, peeled and quartered.
02 - ¼ cup milk.
03 - 2 tablespoons butter.
04 - 1 cup all-purpose flour.
05 - 2 eggs, beaten.
06 - 2 cups breadcrumbs.
07 - 1 cup cheddar cheese, grated.
08 - ½ cup cooked bacon, crumbled.
09 - 2 tablespoons fresh chives, chopped.
10 - 2 tablespoons fresh parsley, chopped.
11 - 1 garlic clove, minced.
12 - Vegetable oil for frying.
13 - Salt and pepper to taste.

# Instructions:

01 - Boil potatoes 15-20 minutes until tender. Drain and mash with milk and butter. Season and cool.
02 - Mix cheese, bacon, herbs, and garlic.
03 - Flatten potato, add filling, fold over and shape into cakes.
04 - Dredge cakes in flour, eggs, then breadcrumbs.
05 - Cook in hot oil 3-4 minutes per side until golden.
