Preheat oven to 350°F and thoroughly coat 9x13 baking dish with cooking spray.

Sauté minced shallot in oiled skillet until golden brown, about 2-3 minutes.

Mix glaze ingredients in small bowl until well combined and set aside.

Combine turkey, mushrooms, shallots, breadcrumbs, ketchup, eggs, salt and marjoram in large bowl.

Mix ingredients thoroughly but gently with hands until well blended.

Place meat mixture on 12x16 inch parchment paper and pat into 10x12 inch rectangle.

Sprinkle shredded cheese evenly over meat surface.

Layer chopped spinach over cheese layer.

Roll mixture carefully from short end using parchment to guide, removing paper as you roll.

Seal ends thoroughly and place seam-side down in prepared dish.

Bake uncovered for 45 minutes.

Remove from oven and brush prepared glaze over entire loaf.

Return to oven for 10-15 minutes until completely cooked through.
