Stuffing Mix Meatloaf (Print Version)

# Ingredients:

01 - 1 pound ground beef (higher fat content recommended)
02 - 1 box Stove Top Stuffing (any flavor)
03 - 2 large eggs
04 - 1/2 cup ketchup, divided
05 - 1/2 cup water

# Instructions:

01 - Preheat oven to 350° F.
02 - In a large bowl, mix together the ground beef, dry stuffing mix, eggs, water and HALF of the ketchup.
03 - Place the mixture into a greased bread loaf pan. If you don't have one, you can form a loaf and place it on a foil lined baking sheet. Fold the edges of the foil up to keep the beef juices contained for easier clean-up.
04 - Spread the remaining ketchup over top. You can also use bbq sauce, chili sauce or a combination of sauces.
05 - Bake for 45-50 minutes or until the internal temperature reaches 160° F.
06 - Allow the meatloaf to rest for about 5 minutes before slicing. Enjoy with mashed potatoes or anything else you'd like!

# Notes:

01 - Higher fat ground beef works best as the breadcrumbs from the stuffing absorb moisture
02 - For lean ground beef, add extra water, splash of milk, or an additional egg
03 - Can be enhanced with diced onion, garlic, cheese, spices, or herbs
