Slow-Roasted Salmon with Sweet Chili Glaze (Print Version)

# Ingredients:

01 - 1/2 cup sweet Thai chili sauce.
02 - 1 teaspoon Sriracha sauce.
03 - 2 tablespoons fresh lime juice.
04 - 2 teaspoons soy sauce.
05 - 1 tablespoon minced fresh ginger.
06 - 1 bunch scallions, thinly sliced.
07 - 1 1/2 pounds center-cut salmon fillet.
08 - 1/2 teaspoon kosher salt.
09 - 1/8 teaspoon black pepper.
10 - 2-3 handfuls mixed baby greens.
11 - 1 tablespoon olive oil.
12 - 1 tablespoon lime juice for greens.
13 - 2-3 sprigs fresh cilantro.
14 - 2-3 sprigs fresh mint.
15 - 1 lime, cut into wedges.

# Instructions:

01 - Mix chili sauce, Sriracha, lime juice, soy sauce, ginger and half the scallions.
02 - Remove pin bones, season with salt and pepper, place in baking dish with 1/3 cup glaze underneath and rest on top.
03 - Slow roast at 275°F for 18-23 minutes until internal temperature reaches 130°F.
04 - Toss greens with olive oil, salt, pepper and lime juice.
05 - Place salmon over greens, top with herbs, remaining scallions and lime wedges.

# Notes:

01 - Can prep up to 2 hours ahead.
02 - Best with center-cut salmon.
03 - Temperature will rise after removing from oven.
