Taco Tortellini Skillet Dish (Print)

01 - 2 ½ cups cheese-filled tortellini
02 - 1 lb lean ground beef
03 - 3 tablespoons taco seasoning or one package
04 - 2 cans (14oz each) fire-roasted diced tomatoes with garlic
05 - ½ cup shredded Mexican cheese, Tex-Mex cheese, or cheddar jack
06 - Squeeze of fresh lime juice
07 - Fresh chopped parsley or cilantro for garnish

# Directions:

01 - Bring a pot of salted water to a boil. Cook tortellini as per package instructions, then drain.
02 - Heat a large skillet over medium-high heat. Add ground beef and cook until browned. Stir in taco seasoning and the fire-roasted diced tomatoes, including their juices. Simmer gently.
03 - Add drained tortellini, shredded cheese, and a dash of lime juice to the skillet. Cover and cook until the cheese has melted.
04 - Serve the dish hot, garnished with freshly chopped parsley or cilantro.
