01 - 1 pound breakfast sausage
02 - 2 tablespoons butter
03 - 1/4 cup all-purpose flour
04 - 2 cups milk
05 - Salt and pepper to taste
06 - 4 cups frozen tater tots
07 - 4 large eggs
08 - 1 cup shredded cheddar cheese
09 - Chopped fresh chives, for garnish (optional)

# Directions:

01 - Preheat your oven to 220°C (425°F).
02 - In a large skillet, cook the breakfast sausage over medium heat until browned and cooked through. Remove from the skillet and set aside.
03 - In the same skillet, melt the butter over medium heat. Whisk in the flour until smooth.
04 - Gradually whisk in the milk, stirring constantly, until the mixture thickens and comes to a simmer. Season with salt and pepper to taste.
05 - Return the cooked breakfast sausage to the skillet and stir until well combined.
06 - Spread the frozen tater tots in a single layer on a baking sheet. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
07 - While the tater tots are baking, fry the eggs to your desired doneness.
08 - Divide the tater tots among four serving bowls. Top each bowl with a portion of the sausage gravy, a fried egg, and shredded cheddar cheese.
09 - Garnish with chopped fresh chives, if desired, and serve hot.
