Teriyaki Chicken Skewers (Print Version)

# Ingredients:

→ Chicken

01 - 2 pounds chicken thighs or breasts, cut into 1-inch cubes

→ Teriyaki Sauce

02 - 2 tablespoons cornstarch
03 - 1 cup water
04 - 1/3 cup brown sugar
05 - 1/3 cup low-sodium soy sauce
06 - 2 cloves garlic, minced
07 - 1 tablespoon rice vinegar
08 - 1/2 tablespoon fresh ginger, minced
09 - 1 tablespoon honey
10 - 1/2 teaspoon sesame oil

→ For Assembly

11 - 8 skewers
12 - Sesame seeds for garnish
13 - Chopped green onions for garnish

# Instructions:

01 - Mix cornstarch and water. Combine with remaining sauce ingredients in saucepan. Simmer until thickened. Cool completely.
02 - Pour half of cooled sauce over chicken in ziplock bag. Marinate at least 30 minutes. Reserve remaining sauce.
03 - Thread chicken onto skewers. Heat grill to medium.
04 - Cook skewers 20-30 minutes, turning every 3-4 minutes. Baste with reserved sauce near end of cooking.
05 - Garnish with sesame seeds and green onions. Serve immediately.

01 - Cool sauce completely before marinating
02 - Can use chicken breast or thighs
03 - Sauce can be made ahead
