Thai Sweet Chilli Beef Bowls (Print Version)

# Ingredients:

→ Main ingredients

01 - 1/3 cup roasted cashews, unsalted or peanuts
02 - 1 tbsp canola oil or other plain cooking oil
03 - 500 g beef mince (ground beef)
04 - 1 small onion, finely chopped
05 - 2 garlic cloves, finely minced
06 - 3 tbsp roughly chopped coriander/cilantro leaves (substitute green onion)

→ Sweet chilli stir fry sauce

07 - 2 tbsp sweet chilli sauce (e.g., Trident)
08 - 2 tbsp fish sauce
09 - 2 tbsp rice vinegar (substitute cider vinegar)
10 - 1 tbsp oyster sauce
11 - 1 tbsp dark soy sauce

→ Sweet chilli drizzle sauce

12 - 1 garlic clove, minced using garlic crusher
13 - 3 tbsp sweet chilli sauce
14 - 2 tbsp lime juice (substitute rice vinegar when limes are expensive)
15 - 2 tsp fish sauce

→ For serving

16 - 2 batches jasmine rice or other plain rice of choice
17 - Steamed or fresh vegetables (e.g., chopped cucumber, coriander/cilantro, finely sliced red onion)

# Instructions:

01 - Mix the drizzle sauce ingredients in a bowl and set aside.
02 - Mix the stir fry sauce ingredients in a separate bowl and set aside.
03 - Heat a large non-stick pan over medium-high heat. Add the cashews and toast for 2 minutes. Transfer to a cutting board, then roughly chop once cool.
04 - Heat the oil in the same pan over high heat. Add the garlic and onion, cooking for 1 minute. Add the beef and cook, breaking it up as you go, until no raw meat is visible.
05 - Add the stir fry sauce to the beef and cook well while stirring until the sauce mostly reduces and caramelizes on the beef, about 3–4 minutes. Do not skip this step, as it enhances flavor.
06 - Serve the beef over cooked rice with a side of vegetables. Drizzle with the prepared sweet chilli sauce, and top with toasted cashews and coriander. Optional: add fresh chilli. Mix everything together to enjoy.
