Preheat the oven to 225°F (110°C). Line a baking sheet with parchment paper.

In a clean bowl, beat the egg whites with cream of tartar until soft peaks form.

Gradually add the sugar, one tablespoon at a time, beating until stiff peaks form and the mixture becomes glossy.

Mix the vanilla extract into the meringue.

Divide the meringue into two portions, tinting one green and leaving the other white.

Transfer each meringue portion into separate piping bags fitted with star tips.

Pipe the green meringue onto the baking sheet to create the tree base. Pipe the white meringue on top in smaller swirls to form a tiered Christmas tree shape.

Decorate the trees with sugar pearls as ornaments and place a gold star sprinkle at the top.

Bake the meringues for 1 ½ to 2 hours until dry and crisp.
