Turkish Eggs Cilbir (Print Version)

# Ingredients:

→ Base

01 - 1 cup Turkish or Greek yogurt
02 - 2 eggs
03 - 2 ounces (55g) butter

→ Herbs & Seasonings

04 - Fresh dill, handful
05 - Fresh mint leaves, handful
06 - ½ garlic clove
07 - 1 teaspoon chili flakes
08 - ½ teaspoon smoked paprika
09 - Salt and pepper to taste

→ Poaching

10 - 1 tablespoon vinegar

# Instructions:

01 - Mix chopped dill, mint, and grated garlic with yogurt. Season with salt and pepper.
02 - Bring water to boil with vinegar. Create vortex and crack egg into center. Cook 3 minutes for runny yolk.
03 - Melt butter and add chili flakes and paprika, stir until combined.
04 - Spread yogurt mixture on plate, top with poached eggs, drizzle with spiced butter. Garnish with herbs and pepper.

# Notes:

01 - Use fresh eggs for best poaching results
02 - Can make mild by using sweet paprika
03 - Start with less garlic and adjust to taste
