Turtle Cookies (Print Version)

# Ingredients:

01 - 1 cup all-purpose flour (125g).
02 - 1/3 cup unsweetened cocoa powder (28g).
03 - 1/4 teaspoon salt.
04 - 1/2 cup butter (113g).
05 - 2/3 cup granulated sugar (134g).
06 - 1 large egg, separated.
07 - 2 tablespoons milk.
08 - 1 teaspoon vanilla extract.
09 - 1 cup finely chopped pecans.
10 - 2/3 cup caramel bits or caramels.
11 - 1/2 teaspoon water.
12 - 2 ounces semi-sweet chocolate (optional).

# Instructions:

01 - Mix flour, cocoa and salt. Beat butter and sugar until fluffy. Add egg yolk, milk, and vanilla. Stir in flour mixture.
02 - Refrigerate dough for one hour until firm.
03 - Roll dough into 20 balls. Dip in whisked egg white, then roll in chopped pecans. Make indentation in centers.
04 - Cook at 350°F for 10-12 minutes. Re-press centers while warm.
05 - Melt caramels with water. Fill centers with caramel. Optional: drizzle with melted chocolate.

# Notes:

01 - Can freeze dough or baked cookies up to 3 months.
02 - Don't overbake - cookies firm up while cooling.
