Ultimate Banana Cake (Print Version)

# Ingredients:

01 - 1 1/2 cups flour.
02 - 1/2 teaspoon baking soda.
03 - 1/4 teaspoon baking powder.
04 - 1/2 teaspoon salt.
05 - 1/4 teaspoon cinnamon.
06 - 1/8 teaspoon nutmeg.
07 - 1 cup granulated sugar.
08 - 1/4 cup neutral oil (vegetable or avocado oil).
09 - 1/4 cup unsweetened plain applesauce.
10 - 2 eggs.
11 - 2 teaspoons vanilla extract.
12 - 2 large bananas mashed.
13 - 1/4 cup butter.
14 - 1/2 teaspoon vanilla extract.
15 - 1 cup powdered sugar.
16 - 1 tablespoon heavy cream.
17 - 1/4 cup chopped walnuts (optional).

# Instructions:

01 - Preheat oven to 325° F. Spray an 8x8 square dish with nonstick cooking spray and set aside.
02 - In a large bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir to combine and set aside.
03 - In a separate bowl, using a hand mixer or stand mixer, mix sugar, oil, and applesauce together. Add eggs, vanilla extract and mashed bananas and mix just until combined.
04 - Slowly incorporate the dry ingredients into the wet until just combined. Pour into prepared dish and bake 25-30 minutes or until toothpick comes out clean when inserted. Cool completely.
05 - Place butter in a small saucepan over medium heat. As soon as the butter melts, remove from heat immediately and pour into a different container. Cool to room temperature.
06 - In a small bowl, using a hand mixer or stand mixer, whip together cooled melted butter, vanilla extract, powdered sugar and heavy cream until smooth and creamy.
07 - Spread frosting over cooled cake and top with chopped walnuts, if desired. Slice into even squares and serve!.
