# Ingredients:

01 - 6 bacon strips, cut into small pieces.
02 - 3 tablespoons butter.
03 - 1 medium yellow onion, finely chopped.
04 - 3 large garlic cloves, minced fresh.
05 - 1/3 cup all-purpose flour.
06 - 2 1/2 pounds gold potatoes, peeled and cut into 1-inch cubes.
07 - 4 cups fresh chicken broth.
08 - 2 cups whole milk.
09 - 2/3 cup heavy cream.
10 - 1 1/2 teaspoons salt.
11 - 1 teaspoon fresh ground black pepper.
12 - 1/2 teaspoon ancho chili powder.
13 - 2/3 cup sour cream.
14 - Shredded cheddar cheese for topping.
15 - Fresh chopped chives for garnish.

# Instructions:

01 - Cook bacon pieces in a large pot until crispy. Remove bacon but keep the fat in pot.
02 - Melt butter in bacon fat. Cook onions until soft, then add garlic until fragrant.
03 - Stir in flour until smooth. Add potatoes, broth, milk, cream, and seasonings. Mix well.
04 - Bring to boil and cook until potatoes are fork-tender, about 10 minutes.
05 - Remove half the soup and blend until smooth. Return to pot with remaining chunky soup.
06 - Stir in sour cream and bacon. Simmer 15 minutes. Top with cheese, extra bacon, and chives.
