Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough into separate bowls and add a few drops of food coloring to each bowl, mixing until the desired colors are achieved.

In another bowl, mix the cream cheese and powdered sugar until smooth.

Roll tablespoons of the colored dough into balls, flatten slightly, and place a small dollop of the cream cheese mixture in the center. Wrap the dough around the filling to seal it inside.

Place the filled dough balls on the prepared baking sheets. Flatten each ball slightly with the palm of your hand.

Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
