Vegan Blueberry Cookies (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 135 grams (1 cup) all-purpose flour
02 - 1/2 teaspoon baking powder
03 - 1/8 teaspoon salt

→ Wet & Sweet Ingredients

04 - 76 grams (1/3 cup) unsalted vegan butter, softened
05 - 90 grams (1/3 cup + 1 tbsp) granulated sugar
06 - 80 grams (1/3 cup) frozen blueberries
07 - 70 grams (1/2 cup) white chocolate chips, chopped

# Instructions:

01 - Preheat your oven to 400°F (200°C).
02 - In a small bowl, whisk together flour, baking powder, and salt.
03 - Thaw frozen blueberries until soft and jammy (30 seconds in microwave or 2-3 minutes on stovetop). Let cool for 2-3 minutes.
04 - Cream together vegan butter and sugar until light and fluffy. Add cooled blueberries and mix until fully pureed and combined.
05 - Gradually fold dry ingredients into wet ingredients. Mix in white chocolate chips. Chill dough in freezer for 30 minutes.
06 - Shape into 12 balls and bake at 400°F for 10-13 minutes until edges are slightly brown. Cool on rack for 5-10 minutes.
