White Chicken Chili (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 small yellow onion, chopped.
03 - 2 cloves garlic, minced.
04 - 2 1/2 cups low-sodium chicken broth.
05 - 2 (4 oz) cans diced green chilies.
06 - 1 1/2 teaspoons ground cumin.
07 - 1/4 teaspoon cayenne pepper.
08 - 1/2 teaspoon dried oregano.
09 - 1/2 teaspoon paprika.
10 - Juice of 1/2 lime.
11 - 2 (15 oz) cans great northern beans.
12 - 1 cup sour cream or Greek yogurt.
13 - 1 cup corn.
14 - 2 cups cooked shredded chicken.
15 - Salt and pepper to taste.
16 - Optional toppings: cilantro, cheese, tortilla chips, green onions, avocado.

# Instructions:

01 - Cook onion in oil until soft, about 3-5 minutes. Add garlic and cook 30 seconds.
02 - Add broth, chilies, spices, lime juice, salt and pepper.
03 - Drain beans. Puree some with broth for thicker texture. Add whole beans and corn.
04 - Cook uncovered 15-30 minutes.
05 - Remove from heat. Stir in sour cream and chicken. Serve with desired toppings.

# Notes:

01 - Can be made in slow cooker or Instant Pot.
02 - Good for using leftover chicken.
03 - Freeze without sour cream for best results.
