white strawberry truffles (Print Version)

# Ingredients:

01 - 250g white chocolate.
02 - 80ml heavy cream.
03 - 15g freeze-dried strawberries.
04 - 150g white chocolate for coating.

# Instructions:

01 - Grind strawberries to fine powder, sift out seeds. Skip if using ready powder.
02 - Heat cream until simmering. Slightly melt chocolate in bowl.
03 - Pour cream over chocolate, wait 2 minutes, then stir until smooth. Add strawberry powder.
04 - Chill ganache 3 hours until firm. Roll into balls, chill again.
05 - Melt coating chocolate. Dip chilled balls, tap off excess.
06 - Top with crushed strawberries before set. Chill 30 minutes.
