Winter Chopped Salad (Print Version)

# Ingredients:

→ Dressing

01 - 1/4 cup extra virgin olive oil
02 - 2 tablespoons balsamic vinegar
03 - 1 1/2 teaspoons Dijon mustard
04 - 1/2 teaspoon honey
05 - 1/4 teaspoon garlic powder
06 - 1/4 teaspoon kosher salt
07 - 1/4 teaspoon black pepper

→ Salad

08 - 6 cups romaine lettuce, chopped
09 - 2 cups rotisserie chicken, shredded
10 - 1 medium Honeycrisp apple, diced
11 - 1/2 cup red onion, diced
12 - 1/2 cup pomegranate seeds
13 - 1/2 cup dried cranberries
14 - 1/2 cup candied pecans, roughly chopped
15 - 1/2 cup feta cheese, crumbled

# Instructions:

01 - Whisk together olive oil, balsamic vinegar, Dijon mustard, honey, garlic powder, salt, and pepper. Set aside.
02 - Combine lettuce, chicken, apple, onion, pomegranate seeds, cranberries, pecans, and feta in large bowl.
03 - Drizzle with dressing and toss gently just before serving.

01 - Dress salad just before serving to maintain crispness
02 - Can use store-bought or homemade candied pecans
