Zucchini Banana Oat Bread (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1½ cups all-purpose flour
02 - 1 teaspoon baking soda
03 - 1 teaspoon baking powder
04 - ½ teaspoon salt
05 - 2 teaspoons ground cinnamon
06 - 1 cup oats
07 - 1 cup granulated sugar

→ Wet Ingredients

08 - 2 large eggs
09 - 1 cup canola oil
10 - 2 teaspoons vanilla
11 - 2 ripe bananas, mashed
12 - 3 cups shredded zucchini

# Instructions:

01 - Heat oven to 350°F. Prepare loaf pans (recipe uses three small loaf pans).
02 - Combine flour, baking soda, baking powder, salt, cinnamon, and oats in large bowl.
03 - In smaller bowl, mix sugar, eggs, oil, vanilla, and mashed banana.
04 - Pour wet mixture into dry ingredients, stir by hand. Mix in shredded zucchini until well incorporated.
05 - Bake 35-45 minutes until bread pulls away from sides and toothpick comes out clean.

01 - Can be made in one large or three small loaf pans
02 - Great way to use extra zucchini
03 - Freezes well
