Heat oven to 350°F. Prepare loaf pans (recipe uses three small loaf pans).

Combine flour, baking soda, baking powder, salt, cinnamon, and oats in large bowl.

In smaller bowl, mix sugar, eggs, oil, vanilla, and mashed banana.

Pour wet mixture into dry ingredients, stir by hand. Mix in shredded zucchini until well incorporated.

Bake 35-45 minutes until bread pulls away from sides and toothpick comes out clean.
